Everyday Dips & Spreads

I’m all about the dips! I love to spruce up simple veg dishes (or any dish), elevate a sandwich or scrambled eggs, or a just have something on hand more exciting that hummus or guac.

So, let’s go beyond the hummus and guac and take it up a notch!

Check out these 5 fab dips & spreads ⬇️ that I served at our NYD retreat 2024. Spending the first day of a new year reflecting, releasing, purifying, letting go & setting intentions is so powerful and You are the medicine!  (the dips are just the cherry on top!)

 

RIGHTEOUS ROMANESCO

3 jarred roasted red peppers

1 C cooked garbanzo beans (chickpeas)

2 Tbs olive oil

1 big clove garlic or 2 small cloves

1 &  1/2 tsp wine vinegar

1/4 tsp salt

1/4 smoked paprika

1/8 tsp Aleppo dried pepper flakes

several cranks of fresh ground pepper

BLEND all the ingredients in a food processor or blender until creamy

 

GORGEOUS GREEN GARNISH

1 bunch of parsley (long stems removed)

1/2 C tahini (sesame seed paste)

the juice of 1 juicy lemon (Meyer preferred)

1/4 C fresh dill

1/8 C fresh mint

3 Tbs olive oil

1 large garlic clove (or 2 small cloves)

1/4 tsp sea salt (more to taste if needed)

4-6 Tbs water (you want a creamy consistency, not too watery)

BLEND all the ingredients in a food processor or blender until your desired creamy consistency

 

YOGURT YUM SAUCE

1 C thick whole milk yogurt (Greek style good)

1/4 C tahini

4 Tbs fresh  lemon juice

2 cloves pressed garlic

1 tsp cumin

1 tsp sea salt

1/2 tsp cardamon powder

WHISK all ingredients together by hand in a medium sized bowl (I prefer a stainless steel bowl because it’s lightweight and keeps everything cool)

*add water to reach your desired consitnecy

 

THE ORIGINAL YUM SAUCE

¼ cup extra-virgin olive oil

¼ cup raw almonds

1 / 3 cup water

¼ cup cooked chickpeas, drained and rinsed

¼ cup nutritional yeast

2½ tablespoons lemon juice

1 teaspoon garlic

¼ teaspoon salt

¾ teaspoon curry powder

½ teaspoon dried oregano

½ teaspoon dried cilantro

 BLEND in food processor or high speed blender combine oil, almonds, water and chickpeas. Blend until relatively smooth. Add remaining ingredients and blend until smooth. 

 

GO GO GOAT CHEESE SPREAD

1 long goat cheese log (or 2 short logs)

3 jarred roasted red peppers (save the liquid)

1/4 C  fresh chopped rosemary and thyme combined

3-4  chopped fresh sage leaves

1 small clove garlic

1-2 Tbs olive oil

1/8 tsp apple cider vinegar

1/8 tsp kosher salt

1/8 tsp Aleppo chili flakes

Generous cranks of fresh ground pepper

*use the jarred peppers liquid to reach your desired consistency-you may not need at all, especially if using as a sandwich spread
