Healthy Banana Balls

These are a big hit, super easy,  gluten-free & vegan!

Preheat oven to 350

INGREDIENTS:

3 large ripe bananas, mashed

1 tsp vanila extract

1/4 Cup coconut oil (soft)

2 Cups rolled oats (GF)

2/3 Cup almond meal

1/3 Cup unsweetened coconut, fine shred

1 tsp cinnamon

1/2 tsp fine grain sea salt

1 tsp baking powder

6-7 oz dark chocolate chips (preferably the minis)

MAKE:

In a large mixing bowl, mash the bananas then mix in the vanilla & coconut oil and set aside

In another bowl add the oats, almond meal, coconut, cinnamon, salt, baking powder

Now add the dry ingredients to the wet ones & stir

Fold in the chocolate chips

Now roll the dough into about tablespoon size balls and place on parchment lined baking sheet

Bake for 12-14 minutes.

*once cooled, you can freeze the extras to enjoy another day
